Recipes: How To Make Coconut Curried Chicken


Coconut Curried Chicken

INGREDIENTS: 600g(18oz) of chicken, 1 litre of coconut milk, 1 small bunch of coriander, chopped, 1tbsb(15gm) of black pepper, 2tbsp(30gm) of ground ginger, 4tbsb(60mg) of curry powder, 1 garlic clove, minced, 75g (2.5oz) of diced Irish potato, salt to taste.

PROCEDURE:

  • Cut chicken into sizable pieces and boil in coconut milk till meat is slightly tender
  • Add all the other ingredients
  • Allow to cook till coconut milk is almost evaporated.
  • Add mashed Irish potato and stir properly. Serve hot.
